all things pumpkin

what a wonderful weekend!! what were we up to? well, there was a 10-11ish mile run, an ice bath, a pig roast, and some pumpkin fun.

i will blog later about the pig roast and the run/ice bath. holy canoly. ice is cold - if you didn't already know.
sunday, j, meg, and i got creative and decided to carve the pumpkins that have been hanging out on our front porch. we decided they needed some character, and it was too nice to just sit inside. and, j said that to his memory - he'd never carved a pumpkin ...... WHAT?!? i know. blasphemy - i say.
dig in!!
since my vols put up a big W this weekend, there was a need for a power T.
the finished products!

i'm so proud!

what does one do with all the gunky junk inside of the pumpkins? right. make roasted pumpkin seeds to snack on! meg and i worked and worked to separate the seeds from the gunk with high hopes of some seeds in which to munch. because, that's what you do...

epic failure. i'm not sure what i did to the 3 entire pumpkins worth of seeds, but they sucked. i gave meg and j a taste test and the looks on their faces looked like they had just eaten a seed from a cow patty. awesome. my first attempt at roasting seeds. fail. oh well.

seeing as though i'm addicted to everything pumpkin, cinnamon, and sugar these days - my friend, doss, sent me a recipe for pumpkin bread that she though i would like. if you click on the recipe - pay no attention to it being a vegetarian web site. jess tried to be a vegetarian for a while - it was just a fad :) have no fear, i used real eggs and skim milk.lemme tell ya, unlike the seeds the bread was NOT a failure. it was actually yumtastic. take a gander at my first ever pumpkin bread :)

dear fall and God - the creator of pumpkins,

i adore you.

xoxo,
